That's a really good one.

This phrase, that's a good one, shows that the listener likes what was said.  Notice the following:

  1. That's a good one. I like that joke.
  2. That's a good one. Nice example!

very much so

Very much so!

The phrase, very much so, just means very much. The word 'so' is just used for emphasis.  Notice the following:

  • Do you like Mexican food?
  • Very much so!
